Make the strawberry syrup
Wash, core, and dice the strawberries.
In a small saucepan, combine the diced strawberries, sugar, and water.
Simmer over medium low heat, until it simmers.
Cook, stirring frequently, until the strawberries are mostly cooked down. Mash the strawberries as you go with your spatula or wooden spoon. It is done when it has thickened into a nice thick syrup and most of the strawberries have broken down.
Remove from heat, stir in the vanilla extract, and allow to cool.
Assemble the strawberry milk
Place a few tablespoons of the cooled strawberry syrup into the bottom of a glass.
Top with fresh chopped strawberry pieces.
Pour in your favorite milk to top the glass.
Enjoy!
Notes: The homemade strawberry syrup can be stored in an air tight container in the fridge for up to 3 days. Assemble the strawberry milk right before serving.
